Apple Crisp - dessert of fall?

Few weeks ago, I dropped out of college - I might just be known as the craziest student baker (I think I am.) I didn't mention it because I know it wasn't something to be proud of..

But that should be a little obvious. Any college students wouldn't be as free as me to be baking (almost) every day. They'd struggle to even do it once a week. LOL.

& On my last day of school, my civics tutor asked me what are my plans so I replied,

"I'm going to study pastry arts."

He gave a doubtful look and questioned "Have you thought about your future career?"

I said, "Yes. I'm going to be a chef", almost beaming with pride.

He ended off the conversation telling me "Well done".

There was no feelings of support, but I was not a bit discouraged. Perhaps chefs are really undervalued. But this is my dream! =)

My holidays brought me to my second pastry job at the National University of Singapore Society (NUSS) Guildhouse. It's like another exciting beginning, first day of work will start today and I'm really looking forward. It has a much bigger kitchen and a lot more chefs than the previous restaurant I worked in. The craziest thing is I'd be spending at least 5 hours of traveling time to and back from work. Yes, I thought there was something really wrong with my intelligence too LOL.

But I'm desperate to learn. I would say yes to any job that is willing to take me, which is nearly none. Because I not only lack skill and experience, I'll be leaving the country in less than 2 months! Who'd want me? I just have to be thankful that the NUSS Guildhouse's restaurant is giving me a chance ^^

& this morning, I decided to make these hot Apple Crisp w large streusel topping because I ran out of eggs. I wanted something simple, quick, and flavourful at the same time. The acidity of the soft green apples w the sweet crunchy topping was a really good combination. I had it warm and topped with a scoop of ice cream which was really fantastic! =)

Apple Crisp Recipe
enough for 4 small ramekins

2 Granny Smith apples, peeled and quartered
1 tsp lemon juice
1 tbsp sugar
56g melted butter
80g flour
40g brown sugar
20g sugar
1/2 tsp cinnamon
1/8 tsp nutmeg

Preheat oven to 350degreesF. Toss the apples, lemon juice and sugar in a large bowl, then divide them equally into the ramekins. Combine the remaining ingredients and spoon them over the apples. To make larger crumbs, rub them topping with your fingers. Bake for 20 minutes or shorter if you prefer to have crunchier apple filling.

I wish I could study pastry arts like you, but my parents would never hear of it. Where was the first place you worked at? I'm really interested in getting a job as a baker after my As Smiling and any idea where I can get a cookie scoop in Singapore? They seem pretty non-existant here Sad thanks!

- enblithe, yes! It is a wonderful experience to be learning from the chefs there Smiling

- anonymous, hello! Nice to meet you! The first place I worked at was O'Gambinos, Raffles City. It is a very friendly kitchen but the restaurant place does not prioritze desserts. Main course and alcohol are more popular among the customers Smiling Try your luck there I think you will get the job because they are currently opening a new branch at Marina Sands, I believe they are short of kitchen staff!
Anyway, it's okay not to study pastry arts. I actually took home baking into serious consideration ever since I started a food blog. I get to know alot of housewives/lawyers/teachers etc who impresses me greatly! Are you a J1 too? Haha! I strongly support you to set up a foodblog too, it is very engaging and you get to learn alot Smiling Lastly, I always use my icecream scoop as a cookie scoop. I'd think they are the same Laughing out loud
