
It's actually a cross between The Pioneer Woman's Flower Pot Dessert and Domestic Goddess's Flower Cookie Cupcake.
Very pretty and cute yup! I made them for my good friend's sister birthday! His sister, D, is turning 12 tomorrow so I thought of making these very adorable 'birthday' cake. It has icecream, oreo crumbs and a sweet sugar cookie. I hope she likes it!

The entire process was quite fast and easy. I like the sugar cookie recipe I used (adapted from Sweet Melissa Sunday's bakers!) I added more sugar since they reviewed the recipe to be a little bland. I also used rose extract instead of vanilla to the cookie dough so that they not only look but also taste and smell like flowers.


I filled the pots strawberry icecream and pink icing for the cookie based on her favourite flavour and colour :) Happy Birthday to D in advance!!

For the Flower Pot IceCream Cake, you'll need
flower pots (of course. LOL)
your favourite ice-cream flavour!

Crushed oreos (I only used 3 cookies to cover my 4 pots)
For the Sugar Cookie
adapted from Sweet Melissa Sundays' Bakers
14tbsp butter, softened
75g sugar
1/2 tsp salt
1/2 tsp rose extract
1 egg
2 cups flour
Cream butter, salt and sugar together until light and fluffy. Add the egg and rose extract. When combine, slowly pour in the flour. Stop once the cookie dough is even.Turn the dough out onto a lightly floured work surface. Pat it together into one piece. Divide the dough into two equal parts, flatten into 5-in round disks, and wrap tightly in plastic wrap. Put what you will use today in the fridge, and the rest (if there is any) goes into the freezer for another time. Chill for at least 45 minutes before rolling.
After chilling, roll in between 2 parchment paper, freeze for 10 minutes, then cut using cookie cutter. Bake for 10 minutes at preheated oven, 350degreesF.
For the Sugar Icing
enough for the sugar cookie recipe above
1 egg white
2 cups powdered sugar
1 tsp lemon juice
colouring
Whisk the egg white until bubbly then pour in the powdered sugar in 4 additions. Scrap down sides of mixer bowl occasionally and scoop them carefully into piping bags (I make them using parchment paper itself).
